Yongzhou Cuisine is the Xiang River Style of  Hunan Cuisine, one of the eight famous traditional Chinese cuisine. Local dishes are delicately cooked with plentiful ingredients, cutting skill, degree of cooking, colour and appearance all being of the utmost importance. Cooking methods include stewing, simmering, curing, steaming, stir-frying, frying, and quick-frying. The flavours are pungent, fresh and fragrant. Such dishes as hot and spicy chicken, stir-fried tripe slivers, tripe in duck's web soup, and dried scallops with steamed egg-whites are all typical food.

What to Eat ?

Duck Spread with Duck Blood While Stirring
After being cleaned, the duck is cut into pieces which are stirred together with ginger, dried hot pepper and garlic. Then delicious soup is added until the soup has evaporated. Later duck blood is spread over the duck pieces while stirring and finally the tasty duck is finished with seasoning.

Mount Jiuyi Stuffed Bean Curd
The bean curd is stuffed with minced meat before being fried or steamed.

Yaoshan Bacon
Baked over a wood fire, such bacon is delicious and can be eaten as a cold dish or stewed as a hot dish. It is one of the unique local foods.
