Tujia Slag


Tujia Slag is also known as Lazy Tofu or 土家合渣(tǔ jiā hé zhā)in Chinese . Tujia people in Zhangjiajie have deep feelings for the slag, especially in the years of turmoil. 

Due to the shortage of food, the slag has saved many people's lives. Therefore, among the Tujia people in Zhangjiajie  and West Hunan, there has been a folk song that has “Chili as salt , and eating slag in the New Year”. 

The method of making the slag of the Tujia is very simple. The water-soaked soybeans are ground with a grinder, then the shredded green leaves are mixed, and then cooked on a warm fire. Although this method is simple in practice, it has a very high nutritional value and a delicious taste. It is a dish commonly used by local people.

Soybeans are rich in protein, vegetables are rich in vitamins, and the slag is lightly scented with aroma, color and nutrition.Nowadays, Zhangjiajie people eat slag is not a "luxury" to eat on holidays. Usually, they can eat slag at home. Many restaurants use it as a special dish and are favored by customers.
