Loached Tofu


Loached Tofu, also known as Stewed Tofu With Loach, is a traditional dish in Zhangjiajie that local Tujia people love to eat. This dish is especially rich in nutrients, and it is especially tender and tender. Its delicious taste is a delicious dish for Tujia people to entertain guests.

How to Cook?

Material
300 grams of live loach, 500 grams of white tofu, 75 grams of peanut oil, 8 onions, 4 small pieces of ginger, 2 tablespoons of rice vinegar, rice wine, soy sauce, cinnamon, pepper, salt, sugar, and 8 red peppers.

1. Get out the dirt from the belly of loaches. Put the loaches in  a basin with fresh water which is poured a small amount of salt .  Change water many times in order to keep water fresh for one night. After the mud to spit out the loaches and other debris in the stomach, then rinse with fresh water. 

2. Prepare to cut Tofu. Cut the tofu into 25 mm cubes, wash and chop the red pepper and ginger, and cut the onions into small pieces.
 
3. Put loaches into the stewed tofu.  Cook and stew tofu in a pot, put loaches into the hot tofu. When the water is hot, the loaches will be drilled in the tofu. After the tofu has been driledl a few small holes, cook in a frying pan, and then put into pepper, green onion, monosodium glutamate, ginger, soy sauce and other ingredients.

The loached tofu is also Diao Chan Tofu. Diao Chan, lived in the late East Han Dynasty was one of the four most beautiful ladies  of China in ancient times. She was a daughter raised by Wang Yun, a minister of the late East Han Dynasty.   Dong Zhuo, also the primer of the emperor in the East Han Dynasty, was very smart just like a loach.  One day,  Dong Zhuo was invited to have dinner at   Wang Yun's  home. He was fall in love with Diao Chan because of her beauty. At last, Dong Zhuo was killed by Lv Bu, a brave general and boy friend of Diao Chan.
 
The meaning of this dish is that Dong Zhuo represented the muddy swindlers who was tormented to die slowly in the hot water. There was nowhere to dodge. He had  to dig into the stewed tofu, but eventually he was cooked together with the tofu. This is the beauty plan that Wang Yun planned in order to let the enemy self-investment!
