Tujia Stone Pot Fish


Tujia Stone Pot Fish, also known as Shiguo Fish (石锅鱼 shí guō yú)or Jinfu Fish (金福鱼 jīn fú yú) is a famous dish in Hunan cuisine. It is made in a unique way. Originally, it was  made into a stone pot with two ears by a large granite rock. The fish was cooked in a stone pot and then added various types of condiments, mainly peppers, and then it ws made with some tonic herbs.

During the Kangxi period in the early Qing Dynasty(1644-1911), there was a small restaurant on the street nearby Xiangjiang River in Changsha City , which was good at making a "stone pot fish" with unique flavor. When Kangxi Emperor visited the area of  South Yangtze River, he tasted this dish in this restaurant. He felt very delicious. and he was so happy that he was pleased to call this dish "Jinfu Fish". Since then, the "stone pot fish" had become "Jinfu fish", and this small restaurant  had been also named "Jin Fulin Restaurant".

The stone pot fish is not greasy, does not get angry, tastes mellow and fragrant, and is in line with the modern people's healthy eating philosophy. The fish stewed in a stone pot has the functions of eyesight, beauty and brain.
